RECIPES Christmas gOODIES Spicy warming aromas of gingerbread and mulled wine spilt in the air announce the approaching holidays. Did you know that gingerbread can be useful and mulled wine does not only warm you up but also helps with a cold? mULLED wINE FOR COLD 2 clementines 1 lemon 1 lime 200g caster sugar 6 whole cloves 1 cinnamon stick 3 fresh bay leaves 1 whole nutmeg, for grating 1 vanilla pod 2 star anise 2 bottles Chianti or other Italian red wine Use a speed-peeler to shave large sections of peel from the clementines, lemon and lime. After, put the sugar in a large saucepan over a medium heat, add the pieces of peel and squeeze in the clementine juice. Add the cloves, cinnamon stick, bay leaves and about 10 to 12 gratings of nutmeg. Halve the vanilla pod lengthways and add to the pan, then stir in just enough red wine to cover the sugar. Keep the mix on a rolling boil for about 4 to 5 minutes, or until you’ve got a beautiful thick syrup. When your syrup is ready, turn the heat down to low and add your star anise and the rest of the wine. Gently heat the wine, and af- ter around 5 minutes, when it’s warm and deli- cious, ladle it into heatproof glasses and serve. 24 | YOUTH CODE 7 | 2017 FITNESS gINgERbREAD 200 gr lour 2 eggs 45 gr honey 30 gr skimmed milk powder 130 gr any fruit puree 1 tbsp olive oil 1 tsp soda 20 gr non-fat cocoa powder 1 tsp Cinnamon 1/2 tsp ground cardamom 1/4 tsp nutmeg 1/2 tsp ground coriander In a saucepan, mix the milk powder, honey, fruit puree, soda and olive oil. Then cook on a slow ire, stirring constantly, until the mixture acquires a brown tinge. Slightly cool down. Pour in eggs, cocoa powder, spices. Stir. Gradually pour in the lour and knead the dough. Place the dough in the fridge for 1 hour. Preheat the oven to 200 degrees. From the cooled dough, form cakes approximately of 40 gr, put them on a baking sheet at the suicient dis- tance apart. Bake for 15-20 minutes.
