SUMMER PRODUCE RECIPE :

TOMATO AND CARAMELISED ONION TART

Method
1 Pre-heat a fan forced oven to 180 ° C .
2 Make olive oil pastry as per the recipe below , and line a 30cm tart pan .
Serves : 6-8 ( for lunch with salad )
Ingredients
Filling
• Olive oil pastry ( see recipe below )
• 2 small containers of cherry tomatoes , washed and halved
• 5 stalks of fresh basil , washed and ripped
• 200gm feta , crumbled
• 1 red onion , halved and sliced
• 2 tablespoons olive oil
• 1 tablespoon brown sugar
• 1 tablespoon balsamic vinegar
• Salt
3 Place chopped tomatoes in a bowl with the basil and feta , sprinkle with a little salt and set to the side .
4 Heat olive oil in a fry pan on a low heat , add red onion and cook for 10-15 minutes until soft , continue stirring so the onion doesn ’ t stick to the pan .
5 When the onion is soft add the brown sugar and balsamic vinegar and cook for a further 5-10 minutes until caramelised .
6 Allow onion to cool for five minutes then combine with the tomato mixture and mix so all ingredients are combined .
7 Spread tart mixture out over the pastry .
8 Bake for 15-20 minutes until the pastry is golden .

THE OLIVE OIL PASTRY

Ingredients
• 1 cup self-raising flour ( white or wholemeal )
• 1 cup plain flour ( white or wholemeal )
• ½ teaspoon salt ( less if desired )
• ½ cup cold water
• ½ cup olive oil *
* Using extra virgin olive oil gives the pastry a strong olive oil flavour . If you prefer a more subtle flavour then use light olive oil .
Note : this pastry cooks a lot quicker than regular pastry so keep an eye on it so it does not overcook .
Method
1 Place the flours and salt in a large bowl and stir to combine .
2 Pour the water and oil into a screw top jar and shake well to partially emulsify ( or whisk together in a bowl ).
3 Pour the liquid into the flour and mix with a wooden spoon for a few seconds until it forms a dough . The dough should come cleanly away from the bowl and you don ’ t need to knead it .
4 Roll it out and use as needed .
Tip : Double the recipe and then freeze or chill the leftover dough to use another time .
