In this issue of WLM, the ladies of Chalk N’ Cheese bring you two recipes sure to delight your taste buds and soothe that inner weather anxiety only Wyoming Sprinter can bring … Grilled Portobello Mushrooms with Blue Cheese Grilled Portobellos scream to be filled with blue cheese. The creaminess of the melted cheese along with the smokiness of the mushroom is very close to heaven on earth. Ingredients: 4 Portobello mushrooms, stems removed 4 oz good quality blue cheese (not the precrumbled type) Extra Virgin Olive oil salt Directions: Heat your grill to medium-hot. Flip the mushrooms over, sprinkle with salt and fill with the blue cheese. Reduce the heat to medium-low and grill until the cheese has melted; roughly 15 more minutes.
