e are excited to welcome Heather Umlauf to Wildcat Extension District as an Extension Nutrition Assistant (EFNEP & SNAP-Ed). Heather will office in Independence, taking the position that Kaci Gilchrist vacated earlier this summer. Heather comes to us with 10 years of owning her own daycare center. Her first day on the job was September 11 and is currently doing an online nutrition course and shadowing Barbara Ames and the Nutrition Assistants in Pittsburg. Thanks to Mandy and Barbara for serving on the search committee.

I am sad to announce that Jan Booth, Nutrition Assistant in Altamont, has submitted her resignation with her last day in the office was September 15. I have requested approval to fill her position, so hopefully that will happen in the next 4-6 weeks.

Pittsburg Farmers Market—Diana Quigley and I enjoyed a Saturday morning sharing tastes of Spaghetti Squash with approximately 75 market goers. We demonstrated how to prepare it as a quick and easy side dish. Most folks who had prepared spaghetti squash, had baked it in the oven, so we were able to tell them how to bake it in the microwave. This cuts the cooking time from about 1 hour to 12 minutes! An amazing number of those who chose to taste our squash, loved it, even if they said they didn’t like spaghetti squash, they indicated that they liked our version. And many had never tried it. Several market vendors told us that they sold a lot more spaghetti squash then normal and had customers saying they bought it because they liked our recipe. We were also able to get several new names to add to our Wildcat District newsletter list.
