At last, summer has finally arrived! The sun is shining, the meat is grilling and the beer is basically drinking itself. Though man can live on beer and burgers alone, a little salad never hurt anyone. Plus, fruit and veggies are at their peak, so it’s the perfect time to make a fresh salad. Now I hate to be the bearer of bad news, but the word salad doesn’t always mean healthy. For example, potato salad or broccoli salad isn’t always nutrient dense or calorie-friendly. For this reason, I’ve made a few ingredient swaps to healthify those summer classics you love.
