Overnight Crockpot Pumpkin Oats

Prep time: 5mins Yields: 8 cups

2 cups steel cut oats

1 15oz can pumpkin puree

1 Tbsp pumpkin pie spice or cinnamon

1 Tbsp vanilla extract

6-8 cups water

Pure maple syrup or honey, to taste

1. Set on warm overnight.

2. One hour prior to serving, remove lid and set on low (or high) to thicken.

3.Mix maple syrup to batch or individual bowls until desired sweetness is achieved (about 1 tsp per bowl).

4. Top with walnuts, pecans, almonds pumpkin seeds, etc.
