Carrot Cake Cookies
Prep time: 10-15 mins Yields: 12-20 cookies
Dry:
1 cup quick oats
¾ cup oat flour (1 cup pulsed oats)
1 ½ tsp baking powder
1 ½ tsp cinnamon
Pinch of nutmeg
Pinch of cloves
Pinch of salt
Wet:
1 egg, room temperature
¾ cup (70g) carrots, grated
1/3 cup (6 Tbsp) unsweetened apple sauce*
2 Tbsp. (30 ml) pure maple syrup
2 Tbsp. (28g) organic virgin coconut oil, melted
1. Mix dry and wet ingredients in separate bowls, then combine into one.
2. Fold in carrots.
3. Chill dough in freezer while the oven preheats to 325F (about 5-7 mins).
4. Line baking sheets with parchment paper and drop dough (golf ball size)
5. Bake for 12-15 minutes.
6. Allow to cool before enjoying as a healthy snack or treat.
*For sweeter cookies, adjust apple sauce to maple syrup ratio by the tablespoon.
