Apple Nut Crisp

Prep time: 15-20 minutes Yields: 12 servings

Base:

5 apples, peeled, cored, sliced (Granny Smith, Empire or Honey Crisp)

1 Tbsp. coconut sugar

1 Tbsp. lemon juice

½ Tbsp. cinnamon

Topping:

1 ½ cups old fashioned oats

1 cup walnuts or pecans, chopped

½ cup coconut sugar

½ cup fine almond flour

½ cup organic virgin coconut oil, melted

1 Tbsp. pure maple syrup or 10 drops liquid stevia

1/2 Tbsp. cinnamon

1 tsp vanilla extract

1. Preheat oven to 375F.

2. In a 9 X 13 baking dish, toss apple slices in lemon juice.

3. Sprinkle cinnamon and lightly toss to coat apples.

4. Next, sprinkle 1 Tbsp. of coconut sugar atop the apple layer.

5. In a medium bowl, combine all topping ingredients.

6. Once crumbly, spread evenly over apple layer.

7. Bake 20-25 minutes or until apples are soft.

8. Serve with favorite vanilla ice cream.
