Caramel Pecan Slice
Smooth and silky caramel with a crunchy pecan base, this
delicious little treat is such a cinch thanks to Ashley Collins
from Nourish Me Mum.
You can make this freezer dessert ahead of time and have a slice ready and
waiting for when the mood strikes or when company drops in. Enjoy!
Serves: 8-12
Time: 10 minutes + set time
Difficulty: Easy
INGREDIENTS
1 1/2 cups full fat coconut cream
16 medjool dates, pitted, soaked in
boiling water for 5 minutes and drained
1 cup pecans

METHOD
1. Line a 15cm square cake tin or small loaf pan with paper and
set aside.
2. To make the caramel topping, add coconut cream and dates
into the Vitamix container in the order listed and secure lid.
3. Set to Variable 3 and turn machine on, slowly increasing to
Variable 7. Process at 7 (scraping down the sides of the jug once
if necessary) until smooth and creamy for about 30 seconds.
4. Pour whole pecans into the bottom of your lined tin, arranging
to cover the bottom of the tin well.
5. Pour prepared caramel mixture over the top, spreading evenly
with a spatula.
6. Place in freezer to set for a minimum of 2 hours or overnight.
The slice will keep in the freezer in an airtight container for
up to one month. Best served directly from the freezer and
enjoyed immediately.
Tip: Add a few flakes of sea salt to each slice before serving to
enhance the caramel flavour.
Note: Any nut can replace pecans.
This recipe has been written for the C-Series machines with Variable Speed control and Standard
2.0-litre container. If you are using a different Vitamix machine or container size, you may need to
make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
