Robert Belcham is practically royalty in Vancouver. The
chef behind Campagnolo (page 102) and Campagnolo
Roma (page 98) has the Midas touch when it comes
to food. He designed the Monarch Burger now on the
menu at The American (page 102), and it’s fit for a
king or queen: slow-aged locally grown beef, ground
fresh daily and shaped into patties. Perfectly browned
buns made in-house each day. Crisp lettuce, seasoned
tomatoes, bread-and-butter pickles and secret sauce.
And on the side, either hand-cut French fries, perfect
poutine (made with cheese curds and gravy flown in
fresh from Montreal), or kale Caesar salad. yes, it’s
