David began cooking at Salisbury
House while still attending high
school, and hasn’t looked back.
He has appreciated all his kitchen
experience but is most excited about
grilling meat perfectly. His joy comes
from preparing a steak or a signature
rack of lamb and working with a
team of people he loves. The new
mix of places popping up means all
tastes are covered in one area. Jackie was only seven when she
proclaimed she would be a chef
one day. Cooking with her mom a nd
grandmother meant bonding time.
Professional training later supported
what she learned then: fresh,
quality ingredients don’t need to be
disguised. At Hy’s she practices this
philosophy. The best part: being in
the centre of the action at Portage
and Main. A long time veteran of the
Exchange, Tristan combines his
classic French training with a
passion for nose to tail eating. This
makes his menu one of the best
examples of old school recipes with
a modern edge. He is excited to be
joined by so many new eateries.
It adds a new mix of energy and
people to the sidewalks.
