Food SWEDEN The Swedish Strawberry Cream Cake By Nathalie, Elin and Victoria The Swedish strawberry cream cake is a popular desert that is usually eaten in the summer – especially on holidays and special events, such as Midsommar (the celebration of summer), the Swedish National Day and graduation. The cake has been a favorite for the swedes’ for many generations and nowadays you can’t go to a summer event without expecting a strawberry cream cake. If you want to make your own Swedish strawberry cream cake, don’t worry. The recipe is easy and it doesn’t take a lot of time to make the cake. Ingredients: Sponge cake: • 4 eggs • 2 dl granulated sugar • 1 dl wheat flour • 5 tbsp potato flour • 0.5 tbsp baking powder If you choose to buy a sponge cake, that’s fine as well. Filling 1 (vanilla cream): • 2 dl milk • 5 tbsp vanilla cream powder Filling 2: • 3 dl mashed strawberries or sliced (you may need to fill it out with some strawberry jam) • 2 dl whipping cream Garnish: • 3 dl whipping cream • 5 dl of strawberries • Flaked chocolate (it’s optional) Grease and sprinkle a form with crumbs. Whip the eggs and sugar with an electric mixer. Mix flour, potato flour, baking powder and add it to the egg mixture. Whip the batter until it is smooth (use an electric mixer). Pour the batter into the form and bake in the lower part of the oven at 175°C for about 40 minutes. Cut the bottom in 3 parts. (Use a bread knife and carefully cut around and then come towards the middle. Use a spatula to lift the bottoms.) Add one of the bottoms on a serving dish. Make the vanilla cream and let it stand in the refrigerator for about 10 minutes. Spread the cream on the cake base. Add the next bottom. Divide the strawberries evenly (you may need to fill it out with some strawberry jam). Whip the cream and spread it on. Add the last bottom. Spread the whipped cream around the sides and on the top. Wash the strawberries and remove the stem. Let the strawberries dry on paper. Slice the strawberries then spread them around the sides and on top of the cake. Sprinkle flaked chocolate. (If you like) You can also pipe the whipped cream if you want a prettier cake. Now there’s nothing left but to enjoy this fabulous piece of wonderment called the Swedish strawberry cream cake.
