Nette doesn’t have her own oven but she bake
her cakes in a steamer that uses a gas range. So
what’s the difference of steamed cakes to regular
baked cakes? Steaming is less expensive and it
allows the cake flavor to be infused and intact. The
heat distribution that comes from a conventional
oven tends to dry out the cake while steaming
is a moist-heat technique that keeps the batter
moist and light. The hot steam circulates evenly
and cooks the cake. And since the wedding cake
is usually served last, steamed cakes are more
recommended because it keeps the cake still
moist, making it a great dessert to cap off the big day.
