around the edges. It was rich and satisfying and each bite made you want to take another. The salad was also excellent. A great example of how time and care can make a dish better than simply the sum of its parts. When you read the menu description it seems pretty simple. It’s a green salad with a vinaigrette, bacon, tomatoes, and croutons, but each individual item is so well sourced and prepared that the dish really is a standout. The bacon, in particular, was so good that I feel you could convince a carnivore to eat this salad. This is something I have learned about French cuisine; a dish may only have a small handful of ingredients, and the description might seem plain or simple, but the quality is always outstanding, and the extra time and care taken on the exacting standards of French cooking PHOTO BY STEPHANIE SHUSTER
