As Brinkman considers what she could
do to survive a sharp rise in the minimum
wage, two options come immediately to
mind.
She could raise prices, making it harder
for her college-student clientele to afford
her restaurants. And she could reduce
hours.
In either case, it’s hard for her to see how
the economy or the workforce is better off.
“Who did I just help?” she says. “No one.”
