Wholesome Breakfast Recipes

O
k, I’ll admit it. I might
enjoy dark chocolate,
caffeine, and a cheeky
red wine too much
to be considered a health
food fanatic. But I do focus my eating habits on fresh, natural foods.
I am a dedicated fan of eating pure
wholefoods and preparing dishes
that are both delicious and nutritious.
We are so fortunate in Thailand,
for a number of reasons, and the ability
to source good quality, fresh foods
is one of them. In these two recipes,
I’ve taken advantage of some gorgeous
Thai ingredients, packed full of minerals,
vitamins, nutrients, and antioxidants.
When shopping for these
ingredients, go for organic if the budget
allows. Your mind and body will thank
you for it.
CITRUS FRUIT SALAD DRIZZLED WITH
RAW HONEY & RAW PISTACHIOS
Citrus salads are incredibly easy to make, stunning to look at,
and quite different from other salads. They barely need dressing,
maybe a drizzle of good quality extra virgin olive oil and a dash
of ground salt and pepper. In this recipe, I have included a simple
dressing to enhance flavour. You can enjoy this refreshing
and delicious salad as a breakfast item — just add natural yoghurt — or as an accompaniment to a fish dish, such as salmon.
INGREDIENTS
- 1 orange
- 1 mandarin
- 1 lime
- 1 pink grapefruit
- 1 kiwi fruit
- Pomegranate seeds
- 30g (about 1/4 cup) pistachio nuts,
chopped
- Fresh mint for garnish
DRESSING
- 1 tablespoon organic, raw honey
- 1/2 teaspoon pure vanilla extract

Rich in antioxidants, tangy fruits
such as oranges reduce the risk
of many chronic diseases, including cancer.

METHOD
1. Combine honey and vanilla. Set aside.
2. Peel and slice fruit, removing
all pith
3. Arrange on a small platter, sprinkle
a few pomegranate seeds on top
4. Garnish with mint & pistachio nuts
5. Drizzle dressing over the top just
prior to serving
Serves 2
Optional: Sprinkle good quality feta or goat cheese and red onion for a savoury version
