Favourite Steak - Flat Iron Steaks, try them cooked dirty, straight on the coals. Resting for 10 minutes.

First ever Flat Iron Steak I tasted was at Barbecoa, Angus, cooked over coal and olive oil herb brushed.....

Try a FlatIiron and hard... and cooked to medium rare. Ask your butcher though, they may not have it on display. Otherwise known as a Butler's steak from the top of the shoulder, this steak is full of wonderful marbling, with great taste and texture.
