If you haven't yet sampled any gaucho style cooking you really are missing out. Asado is set to be big... off of the back of the touch of Francis Mallmann, it's great to see some exciting asadors such as Tom Bray willing to teach people the subtleties of this art.

Tom is running a series of Live Fire Asado courses in Wiltshire and North London, teaching such recipes as:

Whole organic lamb 'a la cruz'

Beef ribs 'a la cruz'

Hung beef fore rib

Hot smoked salmon on a cedar plank (for lunch)

Meat and fish 'a la vara'

Fire veg (onions, leeks, butternut squash etc.)
