Dino Turds

I know what you’re thinking BBQ Dinoturd …what an awful name…but the ABT or Atomic Buffalo Turd is a very popular thing in BBQ circles. ABTs comprise of a jalapeno chilli, stuffed with cream cheese, and wrapped in bacon.Then smoked with BBQ rub and a sauce glaze, really delicious, and once you pop you really can’t stop. They are a great combination, of creamy, spicy, sweet and salty….but if you have meathooks for hands like I do…a real faff…especially if you are making lots.

So I thought it was time to come up with a giant size BBQ Dinoturd…that I could easily assemble with my clumsy hands. With the same combination of flavours only bigger.

Bacon weaves are really en vogue in the bbq world at the moment, there’s plenty of videos out there showing you how to make one, for this recipe you’ll need a bacon weave sheet made out of streaky bacon, 4 rashers wide by 3 rashers long.

Cut the ramiro pepper lengthways, and make up a stuffing of 4 tbsps soft cream cheese, 2 tbsps chopped pickled jalapeno chillies, less or more as you prefer, and 2 tbsps chopped coriander leaf. Fill the ramiro pepper with the stuffing, then turn the pepper so the cut is facing down on the bacon weave, and wrap snugly with the bacon using clingfilm to keep everything secure. Leave to rest for a few mins, and then dust the bacon generously with the BBQ rub of your choice, I used a homemade bbq rub.

I then popped on a bullet smoker for 40 mins at 160c 320f with a handful of bourbon oak cask smoking chips and a little direct heat to crisp up the bacon a little. I brushed liberally with a glaze I made with 4 tbsps BBQ sauce, a splash of bourbon and a little maple syrup, and cooked for another 10 mins. I allowed to rest for 5 minutes before cutting into thick slices and getting stuck in.
