Meat the Butcher

Catherine Butler

Catherine has this year been handed the reins to her Fathers' butchers stall in Swansea Market. The family business dates back to 1878 and prides itself on the quality and provenance of it's meat.

Catherine is proud to continue the family tradition of producing top quality, fully traceable meat – Hugh Phillips is the only stall on the market to have PGI status for its produce, meaning all its meat is Welsh.

The pictures are of myself and my father Hugh working

in the Abattoir and some pictures of the way we dress our lamb`s. and working the butchers stall in Swansea Market.

We asked Catherine what meat she likes to BBQ?

"I have to say my husband made us a rotisserie attachment to our coal BBQ and either a joint of pork or a whole chicken are amazing."

Catherine is looking to build upon the strong reputation they have built by enabling customers to buy their meat online and setting up a website for more people around the UK to enjoy.

We recently had the pleasure of meeting Catherine as a fellow judge at the World Steak Challenge, and wanted to find out a little about her butchery and abattoir in Swansea, which allows full traceability for all meat in her stall.
