6. Smoke over your desired wood for 30 minutes, without peeking! Then open her up and gently stir the liquor, moving the lower levels of the liquid up to be in contact with smoke your CSG is producing. Close her up and allow the liquor to infuse for a further 30 minutes.

7. After the allotted hour, stir once more. Now it’s time for a taste test! If you’re happy with the level of smoky flavour, remove from the smoker. If you feel it would benefit from a little more smoky flavour, keep your dish in the smoke, but taste test every 20 minutes or so until you are happy with the flavour.

8. When you are happy with the level of smoke flavour, remove from the smoker. If there are any particles present in the liquid, strain through a clean tea towel or sieve and return to the bottle for 24 hours to mellow. You may notice that the liquor has changed in colour to a degree, this is completely normal!
