Smoked Salmon, Cucumber and Dill Pate

Ingredients

175g/6 oz smoked Alaska salmon

400g/13/4 cups extra-light soft cheese

2 tbsp chopped fresh dill

finely grated zest of 1 lemon

1 tbsp lemon juice

ΒΌ cucumber, finely chopped

freshly ground black pepper

Directions

1. Chop half of the smoked salmon into small pieces and slice the remainder into strips.

2. Mix the soft cheese with the dill, lemon zest, lemon juice, cucumber and pepper to taste. Fold in the chopped salmon and place in a serving dish.

3. Top with the remaining salmon strips and garnish with a frew sprigs of dill if liked. Serve lightly chilled.
