Ingredients:

- 400grams spaghetti 1kg ripe tomatoes
1 aubergine
- basil
- 2 garlic cloves
- grated salted ricotta
cheese
extravirgin olive oil
- fine salt and poarse
salt (for brine).
800grams sardines.
Step 1: cut the tomatoes,place in an alluminium poat and mash
with your hands,turn the
heat to high and boil for
approximately 20 minutes.
Step 2: sieve the tomatoes,adding the garlic
and basil.
Step 3: reduce the flame,turn off the heat and
add the oil.
Step 4: separately, finally,slice the aubergines
dip in cold wáter and
salt. Leave under a
weight for approximately 1 hour. Then drain
and squeeze dry.
Step 5: fry the aubergines in hot oil and place
on absorbent paper.
