Banana Cupcakes
Serves 12

Cook 25 minutes
• 1 cup butter, at room
temperature, plus 1 cup extra
• 1 cup caster sugar,
plus 1 cup extra
• 3 eggs
• 1/2 cup milk
• 1 1/2 cups self-raising flour, sifted
• 1 large banana, mashed
plus 1 extra to decorate.
1. Preheat oven to 160°C/140°C
fan forced. Line a 12-hole (1/3
cup) muffin tray with paper
cases. In a medium bowl mix
the butter and sugar until well
combined. Add eggs, one by
one, until light and fluffy.
2. Add milk and flour. Beat with
an electric mixer for 2 minutes
or until light and creamy. Add
banana. Mix until just combined.
3. Divide the mixture evenly between
prepared cases. Bake for 20-25
minutes or until a skewer inserted
in centre comes out clean. Cool
in tray for 5 minutes. Transfer to
a wire rack to cool completely.
4. To make Icing: Use an electric
mixer to beat t
