If you are planning that unbelievable sit down dinner, keep your own personality in the menu. Ask the chef to incorporate what you and your future spouse like. For instance, if you use locally grown organic vegetables, ask if they can get them from where you get yours. Keep your menu seasonal. If you have a spring wedding, try and incorporate fresh vegetables and fresh herbs. If you have a summer wedding, utilize fresh corn. If you are having a fall wedding, have the chef integrate butternut squash, and if you are doing a winter wedding, ask to fit in mushrooms in a course.

A Great Time for Dessert Lovers

Desserts and coffee can be a grand experience in itself, rather than just another part of the evening. For a grand reveal, curtain off an area and then open it at a predetermined time for guests to enjoy. Items such as bananas foster, crepes, hand scooped ice cream, petit fours, or a chocolate fountain can make dessert a fun experience for all. An espresso/cappuccino station can be incorporated as well. International coffees may be introduced using sugar rimmed glasses, orange and lemon zest, chantilly crème, and of course the Italian syrups we have all become accustomed to seeing.

The Best Part – The Tasting

You should have a tasting where you get to taste all of the items that you have selected for your wedding day. This is the point in time where you can try different salads, with different dressings; see the courses that are going to be served; and take in the smells that will surround you. Try the wines that are going to be served tableside to your guests. Express your desires for the items that are very important to you, your likes and dislikes food wise. Make sure your chef addresses all of these concerns. HAVE FUN! This is one of the most fun parts of planning your wedding! Try different things, and get out of your comfort zone; try everything the Chef has concocted for you, and remember to look first, smell second, and taste third. Use your senses, and take in the sights and aromas around you. Select everything you want for YOUR wedding!
