SIMPLE , ALL AMERICAN ROAST BEEF
* If you ’ ve never cooked a Roast Beef entree , just relax as it ’ s the simplest thing to do and also very economical to boot . Once you do you ’ ll be cooking one a week .
3 Lbs . Beef Eye of Round Roast Palmful of whatever type of Salt you prefer , palmful of ground black pepper , palmful of garlic powder .
Preheat oven to 375 degrees . If Roast is untied , take plain white cotton twine and tie every 3 inch intervals with twine . * There ’ s a fancy way to do this and you can Google but for now , let ’ s just K . I . S . S . it . Smear a drizzle of olive oil in the bottom of a high sided roasting pan lined w / heavy-duty aluminum foil for easy clean-up . Mix all your spices together thoroughly and rub that Roast down with both hands covering every part of it . This is where you can get creative . If you have certain favorite flavors then add them to the Rub Mix . Or , some people like to lay down all their vegetables on the bottom of pan ( or foil ) carrots , onions , sliced potatoes , etc . Some people like to use spices combined with a pre-made packet of Pot Roast Seasoning you buy at any bigger store in spice aisle . Place on a rack and let stand for at least 15 minutes while you wait for oven to ding .
Roast in oven for 60 minutes ( 20 mins . per pound ). Remove from oven , cover loosely w / foil and let rest for 15-20 minutes before cutting . Remove twine . Always cut against the grain ( the other direction the meat lines are running ) so just slice across the meat like you would a loaf of bread and you ’ ll be fine . If you laid down veggies in bottom of pan , remove to separate platter and cover w / foil also while yoiu shake juices from foil into a small skillet to use pan juices ; add a bottle of Aus ’ Juice to pan drippings . Always serve Roast Beef Aus ’ Juice and Whipped Horseradish Sauce together . Just take as much bottled Horseradish Sauce as
you need and add a cup of Creamy Whip Cream ( in a can ) and whisk all together until combined but nice & creamy . Add a Tablespoon of Dijon Mustard and whisk again lightly . Some people like Aus ’ Juice to dip their meat in along with the Horseradish sauce . ( like me ). So dang good ! & not fussy to make . K . I . S . S . yupper .
BUTTERSCOTCH PUPPY CHOW This is definitely a K . I . S . S . quick & easy munchie food thang ’.
1 Cup of Butterscotch Chips 3 Tbls . of Unsalted Butter 1 / 2 tsp . of table salt 6 Cups of Plain Rice-Cereal Squares 1 / 2 Cup of Powdered Sugar 2 Cups of M & M ’ s Candy Melt butterscotch ships and butter together in a small saucepan over medium-low heat ; stirring constantly . Remove from heat , stir in salt . Drizzle over cereal in a large bowl and gently stir to coat . Transfer mixture to a zip-lock plastic bag and add powdered sugar . Seal bag and shake to coat . Transfer mixture to a rimmed baking sheet to cool completely , about 30 minutes . Stir together mixture and candies in a large bowl . Makes apprx . 8 cups . This Chow will make ya ’ chow down , baby !
CINNAMON PLUM WINE COCKTAIL
1 Bottle of Japanese Plum Wine which is delicious all by itself , but to jazz it up a bit ,
Add : 1 Tbls . of Cinnamon to 1 / 2 cup of heated orange juice .
Pour wine over rocks in a rocks glass , add one tsp . of heated cinnamon orange juice and swirl around to blend . top with an orange peel twisted and rim the glass w / it too . Whooeee ! This will put the razz into your berry . lol
