CRAB CAKES MADE SIMPLE 2 6 oz. can of Crabmeat; drained or if using fresh Crab apprx. a Half Cup 24 Finely Crushed Saltine Crackers - crush in a ziplock bag with rolling pin or large jar or glass until of a fine texture. 2 Large Eggs; separate the yolk from whites in 2 separate bowls 1/2 of a Large Vidalia Sweet Onion; medium chop 2 Tbl. Real Mayo Salt & Pepper to Taste GRILLED ASPARAGUS w/ SWEET BALSAMIC VINEGAR 16 Stalks of Fresh Asparagus; put in a bowl of cold water to rise off until ready to cook 1 Large Piece of Heavy-Duty Aluminum Foil 1 Cup of Quality Balsamic Vinegar Put the balsamic vinegar into a small saucepan on low and let reduce down long and slow; stirring periodically. It should be thick as syrup when it’s done. Lay your foil out and spray w/ oil or butter spray. Lay out your asparagus in a row, salt & pepper w a dash of garlic powder on all along with a few pats of butter here and there. Wrap like a little foil package and throw on a hot grill or in a 365 oven for 15 minutes either way. Open carefully and just drizzle Balsamic reduction over all and serve right from the foil. Yum! E-Zest APPLE CRISP EVER! 2 tsp. Seafood Seasoning 2 tsp. Baking Powder 1-1/2 tsp. Dijon Mustard 1 Lime Put crab meat in bowl and add the crushed saltines. Beat the egg yolks and pour on top. Add remaining ingredients and gently fold till well blended. Be careful not to break up the pieces. Use an electric mixer to beat the egg whites to soft peaks then gently fold this into the crab mixture. Shape the cakes into apprx. 6 rounded cakes. Fry in a mix of extra virgin olive oil and real butter in a cast iron skillet over medium- high heat until golden brown on both sides. Do not overcook. Remove and squirt juice of lime all over and serve with a sauce of thousand island dressing mixed with Whipped Philly Cream Cheese (in a tub next to regular block Philly) do a 1/2 & 1/2 mix and add a few dashes of your fave hot sauce. These are so light and crispy you’re going to be making them often this season. 1 Can of Apple Pie Filling *get the kind w/ the syrupy sauce not in its’ own thin juices. 1 Box of Apple Crisp Mix (right next to the canned pie filling) Put your Apple Crisp Mix into a cheap aluminum pie pan; sprinkle all around and melt the butter like pkg. directions and mix it all through the mix really good. Bake in the oven. While mix is baking put your pie filling in a shallow dish and microwave for 2 minutes until piping hot. Remove mix from oven and with a spoon sprinkle all over the pie filling. Spoon into individual bowls while hot and gooey and then put premium vanilla ice cream on top. Whooee baby! Open wide. HIPPIE JUICE 1 Cup Smirnoff Watermelon Vodka 1/3 Cup of Triple Sec 1/3 Cup Malibu Coconut Rum 4 Scoops Country Time Pink Lemonade Mix Add recommended ice water per lemonade mix directions & chunks of cut watermelon after mixed well.
