SUPER SIMPLE OPEN-FACE QUESADILLAS Pkg. of Large Flour Tortillas Pound of Ground Chuck; browned well Small Onion; chopped medium Small Yellow Pepper; chopped medium Bag of Mexican Cheese Blend Can of Sliced Black Olives 1 Can of Mild Green Chilies 1 Tub of Whipped Philly Crème Cheese Brown your ground chuck and drain; put aside. Take a dab of any kind of cooking oil and put tsp. into a medium hot pan and add a tortilla getting it browned well and crisp on each side. Each tortilla makes ap- prx. 12 smaller triangles so plan ahead how many you want and adjust your other ingredients. Remove to paper towels and let cool. Preheat oven to 450 degrees. Put your tortilla on a flat round pizza pan and smear whipped crème cheese all over it. Next add browned ground chuck, then layer w/ all the top- pings, lots of cheese and cook in oven for 10 minutes until cheese is bubbly. Remove and cut w/ a pizza wheel and serve w/ sour cream. For chicken ones use a large can of chunk chicken (remove broth), or chop up leftover roast chicken and mix it into the Philly whipped crème cheese and add toppings. I make them either way and they’re both truly easy & good. JOE-JOE’s CARIBBEAN SHRIMP ON THE GRILL 100 Count of XXL already cooked & shelled, with tail on, frozen shrimp 2 Sticks of Melted Butter Extra Heavy Duty Aluminum Foil 1/2 Jar of Caribbean Jerk Seasoning (McCormick or other, in spice aisle) 1/2 Jar of Roasted Garlic & Bell Pepper Triple up your aluminum foil and shape it like a boat. In a bowl, mix up your melted butter with your frozen shrimp and all your seasonings. Salt & Pepper taste. Carefully pour into boat; fold down top and fold in sides. Place on platter to take to grill and gently slide off of platter and onto hot grill. These cook literally in apprx. 4 minutes. It only takes the shrimp to unthaw and absorb the mix. Remove from grill, again, gently onto a platter and turn down top foil gently. Leave side foil rolled up. This is our son Joey’s recipe, and we cooked 200 and they were G O N E in about 10 minutes! So easy, yet so delicious. Try this.....and you can also do this same ingredients and method to cook frozen corn on the cob, or fresh corn. It truly soaks up all the butter and spices and is fabulous! If you wanted to do a large batch of shrimp or corn, just get those throw-away aluminum high-sided pans at any gro- cery store. BROWNIE MARSHMALLOW BITES 1 Box of any quality Brownie Mix Throw in pecans or raisins or both if that’s your thang. Cook as directed. Cool till just barely warm. Cut entire pan of brownies into squares. Cut each square through the center; spread marshmallow creme on both sides and place together like a sand- wich. Ice cold milk....Zowie! TAKE ME TO BED OR LOSE ME FOREVVA’ 1 oz. Vodka 1 oz. Amaretto ½ oz. Southern Comfort oz. Orange Juice tsp. Grenadine Fill glass with chipped ice. In large shaker glass add all ingredients and shake shake shake. Pour into prepared glasses. Garnish with orange peel. This will put Spring in your step. Thunder Roads Magazine 26
