Often times I work three 12.5 hours days in a row. I work, eat, sleep, and repeat for three days. The day before my long stretch begins, I make up some salad in jars. I place the dressing in the bottom of the jar.

Next, I fill with carrots, broccoli, cauliflower, fresh kale, spinach, and other fresh greens from my Tower Garden. I then add tomatoes, avocado, beans, rice, fresh herbs, and whatever else I have in the frig.

I love adding fresh fruit, like strawberries, blueberries, blackberries, and oranges, or whatever is in season to my salads. These salads keep for up to four days. They are filling and absolutely amazing!
