I contacted one of these growers through Maree Lewis, a talented Geraldton baker who originally sourced spelt flour from a grower and supplier in Toodyay. His spelt was not grown organically – but the flour is a beautiful product and thank the Lord for his persistence. After trying this flour I approached him about buying some spelt seed for planting, initially for a few kilos, and within a few months upping the request to 500kgs. Early in 2014 the grower reported a bumper year and agreed to sell me unhulled grain for planting. The project was set to go, and a few months later in the middle of April, Geoff and I made the long journey south to haul a half-tonne of spelt back from Red Well farm near Bolgart, north east of Perth, a 1200km round trip from Geraldton. 19 There was some satisfaction knowing that the seed, sitting in a big white haul bag in a shed at Yanget, was ready to go.
