COOKIN’ FOR DA SOUL Reasons to Choose Roasted Chicken Ingredients: yields 4-6 servings • 1 Whole chicken (between 3-5lbs) • 1 tbsp salt • 2 tsp fresh ground pepper • 2 tsp garlic powder • 2 tsp paprika • 2 tsp fresh minced thyme (no stems) • 2 tsp fresh minced sage (no stems) • 1 tbsp olive oil • 1 lemon, quartered Directions: • Preheat oven to 425 degrees • Mix all dry ingredients in a bowl and set aside Herb-Roasted Whole Chicken Photo by Chef Derrek D’s Tips Don’t be a hero, let the chicken cool before slicing. You may feel free to snag as much of the crispy skin for as long as your family will allow. Don’t waste those bones, using the carcass for a homemade chicken stock will transform your ordinary cooking to a gourmet experience! • Rub-down the chicken with olive oil. This step is crucial, the oil allows the seasoning to stick to the chicken and the paprika and garlic powder are fat- soluble which means it helps to bloom the flavors. • Rub the entire chicken down being sure to cover all crevices. • Tuck the wings under the breast. This prevents the tips of the wings from being overcooked. • Place the quartered lemon inside the cavity • Cook on a wire rack over a sheet pan for anywhere from 45 minutes to 1 hour 15 minutes or 15 minutes per pound. When the internal temperature reaches 165 and the skin is golden brown, the chicken is done.
