Sr: It was written up in Restaurant Business magazine as an up and coming brand. I had already been in the restaurant business for 24 years and was looking to own something on my own. Jr: I was working for my father after school and during the summers back when he opened his first location in 1994. We offer a unique and engaging experience that our guest’s desire and I love to be involved in making that happen. Sr: To hire people with strength in your areas of weakness. Jr: That our team members are just as important as our guests and we need to strive to keep both of them happy at all times! Describe the biggest industry change since you started: Sr: Consumers are more demanding because they have so many more choices. The industry continues to evolve faster and faster, very little stays “in”for very long. Jr: The biggest change is the ever-growing target this industry seems to have on it for many special interest groups and the government. It seems we are facing many more “possible”changes than in the past that would impact our businesses if they take place. Describe your current biggest challenge as a franchisee: Jr: Most of us would probably agree that our biggest challenge is the ever-changing regulations we all face from a local and national level and how we can adjust our businesses to stay competitive throughout it all. 2014 Issue 4 | the SCORE 8 Joe Sr. (far right) and Joe Jr. (second from right) pose for a quick picture with two general managers at a Vikings versus Packers game at Lambeau Field.
