Cakes
Theoretically, we could go a little nuts here
with all sorts of cakes as we do like a slice or
two of cake at PGHQ. So we are going to
choose 2 Vegan & 2 Vegetarian cakes for
you.
Vegan
Spiced Tea Cake
We could not resist this recipe when we saw
it from Nathalie Dyson-Coope from the
Intolerant Gourmand. It is delicious, sweet
with a hint of spice and one slice is perfect
with Tea.

Chocolate Cake
Who doesn't like Chocolate Cake, this recipe
we used to do at the Raw Deal, a vegetarian
restaurant in London.
Vegetarian
125g Creamed Coconut
50g Cocoa Powder
400g Self-Raising Flour
5ml Baking Powder
225g Light Soft Brown Sugar
200ml Sunflower Oil
A pinch of Salt
Nothing beats a slice of Bakewell Tart in our
books and it is the perfect Afternoon Tea
treat.
Bakewell Tart

Oil & line a 3pint Loaf tin. Then pour 650ml
of boiling water over the Coconut and stir
till it dissolves, leaving it to cool
Sift the dry ingredients into a bowl. Make a
well and pour the coconut mixture & oil into
it. Then mix well to make a smooth batter.
Pour into the tin and bake for 1 1/2 hours at
180c and firm to the touch. Leave to cool
and serve with either Icing Sugar or
Desiccated Coconut.
