Those on gravity flow bags and buckets didn ’ t do quite as well , but they also tapped early . This is the first year I remember , even looking at my grandfather ’ s logs , that we had
a good year that started in February . Usually , when we start in February , we don ’ t have a good year . A lot of our folks that were running tubing with check valve spouts had a six-week season . Sugar content was one percent lower than average in 2015 . This year , we were seeing a little bit below 2 to 3 tenths of a percent lower than normal . That was what I was hearing . ERIC KLATT of Knapp , Wisc . and his Double E sugarhouse is part of the rapid expansion in the Badger State . Klatt doubles as a tubing installer around the state , in addition to boiling off of 7,000 taps of his own .
SUGARMAKER Todd Thompson with brother Jay and mother Georgene . The family taps about 7,500 in and around Knapp , Wisc . and boil on a 4x14 natural gas evaporator at 18 to 20 percent concentrate .
