There’s nothing quite like the scorching heat, heavy humidity, and delicious smell of piping hot charcoal and barbecue. SUMMER TIME MEANS BBQ The word BBQ itself has a complicated past. The most common one says it stems from “barbacoa,” which is a West Indian term for “slow cooking over hot coals.” The least common says it comes from a bar, beer, and billiards restaurant called the “BAR- BEER-CUE-PIG.” Before we get into this month’s restaurant, let’s look at a couple BBQ food facts. Did you know that 40,000 tons of charcoal is used each year on barbecue? BBQ’s are also a long standing presidential tradition. Lyndon B. Johnson threw the first White House barbecue to feature Texas-style ribs, This month, we stopped at and Jimmy Carter hosted a Jack’s BBQ at 9209 US-278 in Covington, Ga. Jack Broach, pig-pickin’ for 500 people. a former butcher, opened his BBQ shack up about 5 years ago. You’ll always find him there smoking up the meat and greeting his customers with a friendly smile. Just make a note they are open Wednesdays through Saturdays. (They’re closed Sunday through Tuesday). Tonight, I brought the family and we opted to sit out on the patio. Perfect area for kids as they have checkers and tic-tac-toe right on the tables. Great family time while waiting for your food to come out. My dish of the evening was the Rib plate with a side of mac and cheese and homemade chips. The ribs were tender and juicy. I almost didn’t use any sauce. The ribs are great both with or without it. The plate comes with 3 hearty Ribs with plenty of meat on them. The chips were perfectly crisp and salty and the Mac and cheese was exactly what it needed to be, cheesy and creamy. They have a great selection on their menu from brisket to pulled pork, chicken fingers or grilled cheese for the kids. Oh, and don’t forget homemade fried pork/or chicken skins! This is a great summer spot to kick back, relax, and enjoy some great bbq. So kick off summer right and swing by for a bite. See you again next month! NOW OPEN! The birds have risen hours before me, along with many other woodland creatures beginning their morning routine with loud and vigorous gusto. The loud morning cries outside my tent are the most peaceful noises I’ve heard in months. There are no beeping alarm clocks or email notifications greeting me as I reluctantly enter a lucid state of mind and begin my daily rituals. No, this is camping, and it is full of its own beautiful routines: pancakes and eggs over the fire, hiking until you drop, scarfing down dinner, and collapsing beside the campfire before bed. elcome Back to the Dawg House.
