Sourdough Pancakes

Many great memories begin on a chilly morning at camp with a big stack of sourdough pancakes . A favorite topping is qayusaaq ( cranberry ) or asiaviich ( blueberry ) sauce , made fresh from berries picked that season . Arlene Richards of Kiana shares her family sourdough pancake recipe passed down from her mother , Esther Curtis of Kiana . Her mother ’ s sourdough starter recipe is from the 1983 Kotzebue Women ’ s Snow Machine Association recipe book .
Sourdough Starter
1 ¼ c . unsifted flour 1 Tbsp . sugar 1 Tbsp . salt 1 pkg . yeast 1 ½ c . warm water
Combine flour , sugar , salt and dry yeast in a large glass bowl . Gradually add warm water to dry ingredients and beat for 2 minutes at medium speed . Cover bowl with plastic wrap and let stand at room temperature for four days . Stir down daily and recover . Bubbles should begin to form .
Sourdough Pancakes
2 c . sourdough starter 1 c . flour Pinch of salt 2 to 4 Tbsp . sugar ¼ c . milk 1 to 1 ½ tsp . baking soda mixed with water Vegetable oil for cooking
After four days , you should have your sourdough base . The night before you make pancakes , add 1 cup warm water and 1 ½ cup flour . Cover and set out overnight , the mixture should double in size . You will be taking from this mixture for your pancakes . Store extra starter in a closed container in the refrigerator for another time .
In medium glass size bowl , mix sugar , flour and salt . Add in sourdough starter , baking soda mixture and milk . Mix until no longer lumpy . For thicker pancakes , add more flour , for thinner , add more milk . The more bubbles that you have in the starter , the less baking soda you ’ ll have to use . “ If your pancakes are pale , add more sugar !” Arlene suggests .
Heat up a lightly-greased griddle or cast-iron on medium heat . Pour sourdough pancake batter onto griddle . For each pancake , pour about ¼ cup of mixture . Cook pancakes 1 to 2 minutes on each side or until golden brown . Remove from heat and serve with your favorite topping . •
