“It must be red [wine], it’s like a law!” What Wine Cheese? Goes Well With Clemente likes to pair sweet cheese with sweet wines while others may enjoy a sharp contrast between the two. Salati adds that the wine needs to accompany the cheese. For instance, a stronger cheese needs to be accompanied by a stronger wine so that the flavor of both are not lost, “there needs to be a balance.” Gabriella Lucano adds that, “all cheese goes with red wine.” In fact, the Italians asserted, “it must be red, it’s like a law!” While Vincenzo Ottiero is allergic to cheese, he agrees that there is a huge culture about wine, “every region has its own culture about wine and the kitchen.” Even the honey or marmalade that goes with the cheese has its own long history and culture. I was fortunate enough to try some exquisite honey with cheese from Clemente’s fridge. What is Appellation? Gabriella points out that “appellation” is the “naming of a wine,” which is given to it by the location the wine comes from and the process it is made.
