BROCCOLI AND SUN DRIED TOMATO SOUP Serves 6 INGREDIENTS - - - - - - - 375g of chopped broccoli florets 1 tsp coconut oil 150g of sun-dried tomatoes, chopped not packed in oil 1 large onion, chopped 3 cloves of garlic, peeled and minced 375mls low-sodium chicken broth Salt and pepper to taste METHOD 1. 2. 3. 4. 5. Sauté oil, onions, and garlic until tender over medium heat, probably about 8-10 minutes, make sure you keep stirring so you don't burn your garlic. Next add broccoli, sun dried tomatoes, and chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until vegetables are tender. Either use an immersion blender and blend in the sauce pan, or transfer to a blender and blend until smooth and creamy.
