SPICY COD CHOWDER Serves 4 INGREDIENTS - - - - - - - - - - - - - 400mls Chicken Stock 500g White Potatoes 80g Leeks finely chopped 100g Sweetcorn 1 tsp ground mace 300mls coconut milk 500g de-boned skinless cod cut into cubes 2 limes 200g prawns 2 tbsp grated ginger 3 tbsp coriander, finely chopped 1 red chilli 1 tbsp smoked paprika METHOD 1. 2. 3. 4. In a pot add your stock and bring to the oil, add in the chopped potatoes, leeks, ginger and sweet corn for about 10 minutes until soft. Add in your chopped fish, limejuice and zest, finely chopped chilli and coconut milk and allow too simmer for 2 -3 minutes. Add in your fresh prawns (deveined and deshelled), bring to the boil then add in half of your chopped coriander and stir through along with your Sea Salt, Pepper and paprika.
