Chef Daniel Huber is your New Orleans, Southern Style go-to here in the Edmonton food scene. He is half of the dynamic duo that makes up Second Line Food Services.

New Orleans is heavily influenced by Creole cuisine, Cajun cuisine, and soul food. Dishes invented in New Orleans include po' boy and muffuletta sandwiches, oysters Rockefeller and oysters Bienville, pompano en papillote, and bananas Foster, among others.

If you are a fan of NOLA cuisine, you need to keep your eye on pop-ups from Second Line.

Q. What is your muse? What inspires you to come up with new menu items?

A. ..the idea food is fun and part of a larger experience. I loathe pretentious music, art and even food.

Q. What did you eat for dinner last night?

A. A charcuterie platter from the gang at Secret meat club....

Q. What is your favourite place in Edmonton to eat when you are not cooking?

A. To treat myself, anything Daniel Costa owns. For comfort food, Northern Chicken

Q. What is your most favourite ingredient to work with?

A. Easily garlic, or lately incorporating pickled items into dishes or sandwiches.

Q. What is your favourite charity event that you do?

A. This is tough, anything that allows me to meet the people I am helping. All of it.

Q. What can your fans expect from you in the next year or so?

A. Another restaurant consult and opening a small shop/food court stand alone.

Q. Tell me a bit about Second Line Food Services...

A. New Orleans is mecca to me and my partner Eli, we went, experienced everything, and it did everything to reaffirm what is important and beautiful about cooking. Google a "Second Line" and you will the spirit of that celebration.

Q. First word that comes to mind when I say foodie?

A. On one hand, someone who has made a hobby of diving into food culture and should, in theory, understand it and revere it more than the average person. Also, entitled and cringe inducing boobs who suck the fun out of things.

Q. Last weekend on earth - what city are you eating in?

A New Orleans; if its been sacked and burnt to the ground amongst the ruins of society, Chicago.
