QA & AD SC T he history of the Salon winery and production of the Champagne is in and of itself uniquely fascinating. In my research I have learned that the house of Salon, which is situated in Le Mesnil- sur-Oger, in the Côte des Blancs, has only one Champagne. This Champagne is produced from a one hectare parcel owned by Salon, “Salon’s garden”, and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Eugène-Aimé Salon at the beginning of the century. The wine produced here are on counts rare. Is there a single element from the history of Salon that holds crucial importance to its continuous reigning position among Champagne today? W ith 37 vintages produced in the XXth century, Champagne Salon has made the exception its rule. Thanks to its continuous rigour of a strict selection of greatest harvests only, able to provide wines with a longevity of 30 to 50 years, Salon remains the unique example in the wine world with such a philosophy.
