Formerly of Philadelphia, the couple Nikki Hill
and Claire Wadsworth have created in La Copine
a down home atmosphere with a deliciously
sophisticated menu and just a dash of chic-ness
to transform a once roadside diner into a desert
dining hub.
Claire, manning the front of the house, makes
visitors feel like regulars and regular locals feel
like family. Nikki, who is a trained chef, runs the
kitchen, deftly bringing their culinary creations to
life. Using organic ingredients and imagination
Nikki puts a global spin on dishes whose roots
are reminiscent of the South. With a warm and
welcoming serving staff and a fluid kitchen team
La Copine could thrive in almost any city in the
world. For those of us who call a slice of the
desert home, we’re more than glad to have them
just where they are.
