Apple Cider Caramels

Nothing says fall to me like the chewy magic of a homemade caramel. Many
caramel recipes rely on corn syrup, but this one offers just as much chewy
goodness without it. This recipe starts with reducing apple cider down to a thick
syrup, giving the final product an intense, autumnal depth of flavor. If you’ve ever
been intimated by the thought of making candy, this recipe is a great first step into
making homemade confections. A high sided pot and a candy thermometer to clip
to the side are the only tools you really need. Wrap with wax paper and some
bakers twine, and you’ve got a treat that will satisfy your sweet tooth right into
winter.
