Ingredients:
375ml (1½ cups) self-raising flour
180ml (¾ cup) castor sugar
pinch of salt
50g butter, melted
180ml (¾ cup) milk
10ml (2tsp) vanilla essence
250ml (1 cup) fresh or frozen
strawberries, chopped + extra
180ml (¾ cup) strawberry jam
180ml (¾ cup) boiling water
60ml (¼ cup) castor sugar
60ml (¼ cup) strawberry jam
Directions:
1. Preheat oven to 180°C. Grease 6 x 250ml ovenproof bowls.
2. Sift the flour, sugar and salt together. Stir in the butter, milk and vanilla until smooth. Fold in the strawberries. Mix the jam and remaining strawberries together and divide between the prepared bowls.
Spoon the batter on top.
3. For the sauce, mix the water, sugar and jam together. Divide sauce evenly over batter in each dish. Bake
for 25-30 minutes or until cooked. Serve with extra strawberries on top.
