WHITE CHRISTMAS PIE

Soften2 Tbsp. Gelatin1 Tbsp. Gelatin

In½ C. cold water3 Tbsp. cold water

Mix together in sauce pan:

½ C. sugar6 Tbsp. sugar

4 Tbsp. flour3 Tbsp. flour

½ tsp. salt1/3 tsp. salt

1 ½ C. milk1 1/8 C. milk

Cook over low to medium heat until a low boil – stir constantly.

Remove from heat. Stir in soft gelatin. Cool until partially set. Beat until smooth.

Blend in:

¾ tsp. vanilla extract½ tsp. vanilla extract

¼ tsp. Almond extract¼ tsp. Almond extract

Gently fold in:

½ C. stiff whipping cream¼ C. stiff whipping cream

Carefully fold into a meringue of:

3 egg whites2 egg whites

¼ tsp. cream of tartar¼ tsp cream of tarter

½ C. sugar6 tbsp. sugar

1 C. coconut¾ C. coconut

Pour into cooked pie shell. Sprinkle with coconut. Chill until set – about 2 hours.
