With a rich and impressive culinary background, Chef Aaron is bringing the tastes and cuisines from his travels and experiences to Stratton. Born in Orrington, Maine, Chef Aaron developed a strong work ethic and a passion for crafting fi ne cuisine at an early age thanks to the infl uence of his father, a prize fi sherman. As a graduate from the International Institute of Culinary Arts in Fall River, MA, Chef Aaron studied under Greek Master Chef George Karousos in a rigorous program which focused on global craft cuisine and classical hospitality. With a passion for using local, fresh ingredients he enjoys pushing boundaries to create dishes with bold fl avors. An honor and highlight of Chef Aaron’s career included working under Chef Norman Van Aken in one of the most exclusive and premier clubs in the world, Ocean Reef in Key Largo. This, combined with his time working in Yellowstone, Scottsdale, the Hamptons, and Miami, gives Chef Aaron’s diners experiences they come back for time and time again. Luis started his career in fi ne dining at The River Café in Brooklyn, where he found his niche. From there, Luis’ career took him to Le Bernardin, one of the fi nest dining restaurants in New York City, where he continued to refi ne his maître d’ skills. The draw of The Green Mountain State brought Luis and his sophisticated talents to Vermont with his wife Debbie and three young children. Luis has a gift for understanding the unique wants of his guests which brings a genuine warmth to the atmosphere at Verdé.
