What gives you the ideas for your
chocolates? You mentioned growing up in
lots of different countries.
Sometimes it’s things I have around me.
It might be ingredients in my kitchen or
I could be going out to eat a meal with
someone, it might pop up unexpectedly
for example if you’re reading something.
I went to boarding school and had
horrible food to eat so I begged my
mother to send me something tempting
to enjoy eating. Chocolate was the food!
I also loved Roald Dahl’s Charlie and the
Chocolate Factory and never stopped
wanting to make my own chocolate too.
Do you like eggs in shells as well?
I do! I like to eat a boiled egg on
Saturday mornings. I’ve got a tiny frying

butter and a little water to help steam it.

Do you go out to visit where your cocoa is
growing?
We are just going to Grenada very
soon where we have our cocoa farm.

of the hurricane and the people were
desperate for more organic cocoa.
