Strawberry Red Wine Popsicles

Are you wondering what to do with your left-over wine ( if there is such a thing !) and with all these beautiful spring-time strawberries ? This is one beautifully-refreshing recipe , give them a try ! Makes 6-8 popsicles
• 1-1 / 2 Cups of strawberries , hulled and quartered
• 1 teaspoon balsamic vinegar
• 2 Tablespoons maple syrup
• 1 Tablespoon Chia seeds ( for healthy + natural thickening )
• 1 / 2 teaspoon of orange or lemon rind
• 1 cup red wine – Cabernet Sauvignon is great
In a small pot , mix together the strawberries , balsamic vinegar , maple syrup , and bring to a simmer on medium-low mixing often until the strawberries have “ mushed-up ” a bit , approximately 5 minutes .
Remove from heat and add the Chia seeds , which will help thicken mixture as it cools . Immediately follow by adding orange or lemon rind , mix well and let stand until mixture is cooled to room temperature . Taste and adjust for sweetness preference , by adding more maple syrup if necessary .
Place half of the mixture in a blender and blend until smooth , then add the red wine .
Spoon the remaining half of the strawberry mixture evenly into the popsicle molds , then top off with the blended strawberry + wine liquid mixture .
Freeze popsicles for approximately 30 minutes before inserting popsicle sticks . Then freeze for a remaining 4-6 hours until completely frozen .
