QUINOA THE GREAT

Quinoa “ meat ” balls ( meatless )

2 cups cooked quinoa 2 cups cooked chickpeas or lentils , mashed ¼ cup diced red bell pepper ½ cup diced onion 2 cloves garlic , minced ½ cup bread crumbs
( or gluten-free flour ) ¼ cup freshly grated Parmesan 1 Tbsp . dried Italian seasonings 1 Tbsp . dried paprika 1 / 2 tsp pepper sea salt to taste 2 eggs 3 Tbsp . olive or grapeseed oil
Preheat oven to 375 ° F
In a large mixing bowl , combine all ingredients well , very similar to making meatballs .
Using your hands , shape into 1-1 / 2 ” balls ( this recipe will make 2 dozen balls ) and place on 2 cookie sheets that have been covered with parchment paper .
Drizzle with oil , then bake for 15 minutes , turning once half-way through .
These Quinoa balls will be crunchy , therefore you may choose to dunk them in your favourite tomato sauce .
1 Tbsp . olive or grapeseed oil 2 cloves of garlic , minced 1 Cup quinoa , rinsed 1 Cup vegetable broth 1 can ( 15 oz ) black beans , drained and rinsed very well 1 can ( 15 oz ) kidney beans , drained and rinsed very well ½ can ( 15 oz ) stewed tomatoes 1 Cup frozen corn ½ red pepper , diced ½ onion , diced ½ tsp . cumin powder sea salt and fresh pepper to taste 2 Tbsp . fresh cilantro , chopped Juice of 1 lime

20-minute Mexican Quinoa

In a large pot , heat oil to medium and add garlic and onion . Sauté about one minute .
Stir in balance of ingredients minus the cilantro and lime and bring to a boil .
Cover , reduce heat to simmer until quinoa is cooked through – about 15 minutes , stirring occasionally to prevent burning at the bottom .
Remove from heat , stir in cilantro and lime , and serve .
