Learn more online: www.silvergoldmagazine.ca Mini Apple Crum-Pies Gluten Free*! • 5 apples (Granny Smith are more tart, Gala are sweeter) • 1 tsp cinnamon • 3 Tbsp. brown sugar • 4 Tbsp. oatmeal (ensure oatmeal is a wheat-free mix if gluten-free is desired*) • 1/4 Cup sliced & chopped almonds or walnuts (optional, for crunch & protein) • 1 lime (for its juice, and half of it for its rind) • butter (for top) • 1 Cup water Cut the top of the apples for easy access to the meat inside (peel and save the meat for inside filling). Hollow apples using a small melon baller, saving the meat, and place remaining rinds in an 8x8” baking pan (shape tin foil to support apples, if necessary). In a separate large bowl mix all ingredients minus the water, and including the lime rind and juice, and allow to sit for 20 minutes. Preheat oven to 400°F. Fill apples with mixture and top with a dollop (about 1/2 tsp each) of butter. Add water to pan, and cover pan tightly with foil. Bake for 30 minutes. Carefully remove foil and bake for an additional 10 minutes. Once browned on top and mixture bubbling, remove from the oven and serve with a side of vanilla ice cream. Indulge!
